To make an Arabic-style creamy mac and cheese pasta, we need
400 grams Ditalini Regate pasta or your favorite pasta
1 cup milk
3 tablespoons olive oil
2 tablespoon butter
2 tablespoons flour
1 pinch of ground nutmeg
Salt and pepper, to taste
100 grams grated cheddar cheese
100 grams grated mozzarella cheese
For garnishing:
½ teaspoon chopped rosemary
It's great if you have all the ingredients ready before you start cooking! Make sure you follow all the steps closely to get the best results.
1. Take a pot full of water and bring it to a boil. Add salt and Ditalini Rigate Pasta to the boiling water, and stir occasionally until cooked. Make sure the pasta is well-cooked. It will take around 8-10 minutes. Now, drain the water and set aside the cooked pasta.
2. Preheat the saucepan and add olive oil to it. Melt butter in a saucepan over medium heat.
3. Add flour, salt, and pepper to the melted butter and stir for 5 minutes until the flour changes its color and gets light brown.
4. Pour in milk slowly and stir continuously to avoid clumps of flour. Continue to stir for 5 minutes until the mixture is smooth and bubbling.
5. Add Cheddar cheese and mozzarella cheese into the mixture and stir until melted. The cheese sauce is ready once the mixture gets velvety. It will take around 2 to 3 minutes.
6. Take a large pot and add cooked pasta to it. Now pour the cheese sauce over it. Mix well so that every piece of pasta is coated with cheese.
7. Transfer the mac and cheese to a buttered serving dish, and sprinkle some chopped rosemary on it to garnish.
Ta-da, Your Mac and Cheese is ready to serve!
